Sunday Morning Teddy Bear Breakfast!

I modified my Breakfast Casserole recipe to make it a little more fun for my kiddos! 

INGREDIENTS:

1 cup shredded cheese, divided

2 cups frozen hash browns

3/4 cup crumbled bacon

5 eggs

Drizzle of Olive Oil (optional)


METHOD:

1. Prep Teddy Bear Tray onto Perforated Baking Tray and preheat oven to 350*F.

2. Sprinkle half of the cheese into the bottoms of each teddy bear, making a thin layer. 

3. Mix bacon, hash browns and oil together in a small bowl, and spoon mixture into teddy bears, gently pressing down until full.     (I like to quickly pan fry the mixture before putting it into the tray, to soften the potatoes and bring out the bacon flavor, but it is not necessary.)


4. Beat 5 eggs in a large liquid measuring cup, or other pourable container, and evenly distribute on top of hash brown mixture, until teddy bear is full. Top with remaining cheese.


5. Bake for approximately 25 minutes, or until internal temperature reaches 165*F. Let teddy bears cool, and then pop out to eat!


These can be refrigerated or frozen for later, and heat up nicely in the microwave!
